I've many fields with check items simply retrieved from Joomla menu table.
Acctually, site supports 5 languages where french and italian require menu item titles to be split into more than one word to make sense.
Any change to menus is reflected to CB user's select options.
When items with multiple word occur CB adds extra lines (breaks) to a check box.
This is gone however when item selected (see attachment).
I guess there's CSS to modify to solve this issue.
Any help?

PS: There is no issue when using Query Drop Down Multiple but this option isn't suitable for this use case.
It's not adding line breaks. You've spaces and there's not enough room to display everything on 1 line. Switch to default Joomla protostar template and see if issue persists as looks like there's some CSS limiting the width of label elements.
