The new user registration email is strictly a language string. So you'll need to edit the language files and adjust the below as needed.

UE_REG_ADMIN_SUB
UE_REG_ADMIN_MSG

For pending approval it's the following language keys.

UE_REG_ADMIN_PA_SUB
UE_REG_ADMIN_PA_MSG

See the below regarding language usage information.

www.joomlapolis.com/cb-solutions/languages

Additionally language usage information can be found in the CB Primer Book. As that's a standard core CB string you can use a language override plugin as detailed below to override that string entirely without modifying core language files.

Is it possible to include field values from the registration form? And where would I edit the admin information email?

You should be able to use substitutions, but can't recall if they work in that email.

And where would I edit the admin information email?

The admin email is whatever your users email address is set to. You can edit your user within CB > User Management.
