Is there a way to limit the amount of k2 articles or joomla articles a user or user group can use on CB subscription?

Joomla, no as it has no such functionality. If K2 has functionality to limit articles created per user then CBSubs maybe able to, but I don't know if it has such functionality. CBSubs can't create features like that that don't already exist.

Is it possible to make Say 3 CB Subs plans to determine and Create Limit amount of CB Blogs articles and even categorys

So on sigh up user selects 1 category from dropdown field CB Subs plan 1 lets user create 1 article in category selected
So on sigh up user selects 2 categorys from dropdown field CB Subs plan 2 lets user create 2 articles in categories selected
So on sigh up user selects 3 categorys from dropdown field CB Subs plan 3 lets user create 3 articles in categories selected
I article per category selected

If so how??

No, CB Blogs does not have the functionality for per user create limits. Even when it does it won't work as you're wanting (per user per category) as it'd just be a CB field that it checks against that you'd adjust using CBSubs Fields.

Would it be possible to make 3 copys of CB Blogs plugins each one points to a k2 category , a joomla category and a blogs itself category?

You said Even when it does it won't work as you're wanting (per user per category) OK how would it work when it does? Would it just limit amount of articles per CB Subs plan. That would work fine.

Yes, CBSubs Fields Tabs Protection can show/hide the blogs tab based off the profile owner subscription and/or the viewing user subscription.

It would be a CB field that you select which would be used for checking create limit. Using CBSubs you'd change the value of that field based off subscription. CB Gallery has this type of usage if you want to see it in action.
