You want to substitute in the moderators username or the username of the profile that was updated? The substitutions by default are of the user object of the trigger. So this typically would be the profile owner. For the moderator you can try using [cb:userdata field="FIELD_NAME" user="#me" /] usages. Note you should be using the after profile update trigger though.
