In CB 2.0.15, is it possible to add additional columns to the CB User Manager layout, so that an extra field, such as organisation, can be displayed as part of the User Manager list in the back end?
If so, how do I do this?

Not without making a CB plugin to load extra XML. CBSubs does this to add the Subscription column and filtering. The alternative is core modifications to the XML which I do not recommend and can not help you with.
