Hello!

When sending e-mails to people using Mass Mailer in User Management of Community Builder, will users be able to see each other's e-mail addresses (which is what I DON'T want)? Or will Mass Mailer be sending the e-mails without listing other selected users, BCC-style?

They will not be able to see each others email address. They're not sent as BCC or CC, but as individual emails.
