Strangely, I tried all sorts of image file types (jpg, jpeg, png), but they all throw the same error. (I added these extensions in the validation section. The uploads seem to work okay inside the CB gallery, so the only issue is when someone tries to post an image in the activity feed. Is it possible I messed something up in the activity feed settings?It's throwing a validation error that what you're trying to upload is in the acceptance list of extensions. It however isn't showing any extensions so something is wrong here. The auto action by default just inherits whatever you've configured the global CB Gallery settings to so that's probably where your issue is is within CB Gallery > Parameters, but if you made a copy of the system action you can just edit the parameters in your copy instead.

So the order is CB Activity Overrides > Gallery Tab > CB Gallery Plugin since stream uploads are always to profile gallery.

Same as Global is within CB Gallery > Parameters. The exception here is inherited galleries. CB Activity uploads to the Profile gallery. This is the gallery tab in CB > Tab Management. So it inherits from that tab first.When I set parameters to "Same as Global," where are the global settings configured?

Correct.So, for example, if I want to allow members to post photos, videos or files to an activity feed, I would enable the setting CB Activity Activity Stream Settings, which overrides any of the settings in the Gallery Tab and CB Gallery Plugin.
Those are the GJ integration parameters.I think I am also getting confused because I still have the older Video/Photo/Files Plugin.
