I'd like to change the "userlist" label on the userlist drop down to say "contacts". I can't seem to find the option in the backend, If I need to edit that in the code. Where would that be?

CB controls multiple language strings via language plugins. You can adjust these strings in default_language.php at components/com_comprofiler/plugin/language/default_language/.
