Is there any way to make a step by step membership?
Eg. User registers with basic membership - then when they have completed certain tests (AriQuiz) or read certain articles on the site they are automatically elevated to the next membership, and so on? Is this possible with CB subs?

Not automatically.
But CBSubs and CB can be used in combination to support this perhaps with the assistance of additional plugins if needed (to identify if the AriQuz tests have been completed).
