For all my study I can’t seem to answer this:
I have a site where we have an annual race. I'd like contestants to be able to pay their entry fees and fill out a profile that includes additional information that will display their stats etc. (I think I'll need cbsubs for this).
I also have officials and volunteers. They have don't need these additional fields.
Is it possible to have different forms and or fields for different users?
You can use the CBSubs fields/tabs protection integration plugin to do this.
Each CBSubs plan can protect specific CB fields/tabs so they are only available for subscribers of the plan.
