User acess functionality was created by hisimage
I am needing to have some more advanced functionality to the user profiles and log-in for my site. I am sure CB has way more functionality than I need, but here is specifically what I am looking for.

I need to add custom information to user profiles.
I need a user to see "registered" pages after logging in.
I need stats as to how many times a user has logged in.

Can it do these without a lot of the other features being active?

Since you posted in the Presales forum area I am using my presales hat ;-)

Standard CB functionality. You can add CB fields and CB tabs to your profiles.
CB Field manager and CB tab manager in you backend handles this.
Upgrading your membership will give you more add-ons, support forum posting and detailed CB documentation (see membership comparison page - www.joomlapolis.com/memberships )

Standard Joomla functionality I believe - if I understood the question.

No such feature exists.
You can probably configure a CB Auto Action to bump a CB integer field everytime a login is successful.
CB Auto Actions plugin is available to Professional members.
