I have setuped the incubator plugin cb email to get a notification if users has updated their profile. This is working perfect.

But is there any way to include the changed fields / value into the notification email?

Yes, simply use substitutions. Please see tutorials within signature for substitution usage information. Example: [cb_myfield], [user_id], [username], etc...

Thanks, I know.

My question was, if it is possible to identify which field has been changed by the user since last modification.

No, there's no way specifically to know which field changed. It simply acts on that CB trigger and uses substitution API for that user object. You'll need to develop a new integration to log the changes then email those changes at that trigger if you're needing a more customized experience.
