Are there any components available that will allow me to have 2 or 3 files uploaded to a users profile?

CB Ajax File fieldtype is your best friend

CB ProfileGallery Plugin can also serve as a little file repository! (it offers an image and file mode, you can check it out on your Joomlapolis CB profile)
