We don't have a Persian calendar. You'll need to develop a new fieldtype plugin to provide that. The calendar we have available is drop-downs or the older calendar, which is just a text field (both include the pop-up calendar). If all you want to do is translate the existing calendar please review CBs language files as you can adjust the strings as necessary.
