GJ only deletes a users data if he leaves a group (manually or forced by an admin). This can be turned off in GJ configuration (it's enabled by default). So if he posted a bunch of stuff, left by mistake, then rejoined it's possible his stuff was deleted that way, but doesn't explain why 1 post would remain. Group owner, moderators, or admins maybe deleted his stuff as well as they do have the power to do such things.
Don't think Joomla version will have any affect, but you should upgrade anyway as J1.6 is basically a beta for J1.7.
