No, professional plugins don't come with documentation. There are dozens of examples all around this forum however where people have used it. There's also an example tutorial below (not your usage, but usage in general).

In which field are managed these values?

Whatever field you want. Could be a Radio field. You'd then map that radio field to the Kunena gender field in CB Forums. Then when they save their profile CB Forums will push the value to Kunenas database.

Maybe I wrong, but the K2 users are need to assign them the rights over the k2 categories.

If you want to use K2 groups then yes you'd need to add the user to K2. This is already going to be handled with new CB Auto Actions release though where it can do K2 user synchronization. See the below feature ticket.

I don't find where I can map CB Radio field to Kunena Gender Field. (K2)

There is no option like this in CB Plugin for Kunena...

Forum integration does field mapping in "beginner" sidebar mode. CB Forums does field mapping within its configuration. This is already explained in this post, please read previous replies.
