What file/files would you suggest I start looking in if I wanted to replace the Registered Date Column in User Management with a CB_BusinessName column?

Admin/components/com_profiler/controller -> controller.user.php or controller.users.php?

I know probably enough to be scary/dangerous and can work my way around phpadmin too, but if you could kindly point me in the right direction that would be amazing!

I'm sorry we do not support core edits. I can not help you in that regard. You should develop a new trigger based CB plugin to extend the User Management properly with API. Please see the below tutorial regarding trigger usage (example included).
