Rating field is just an integer field basically. It always contains the users average rating. Simply select the field in Sort By when editing your userlist. Don't think CB ProfileBook rating will work though as believe it's a calculated field, but I know CB Rating Fieldtype plugin fields work fine.

The rating field provided by CB ProfileBook can't be used, it's calculated and not stored in _comprofiler. You need to use a rating field provided by the CB Rating Fieldtype plugin.
