but the system doesn't remember me and I have to add the user/pass each time I want to log in....
It's a browser cookie that does the remembering. If the browser cookie doesn't exist anymore then it won't matter if it was checked or not. Your browser is probably purging cookies everytime you close your browser.

No idea, Joomla handles the Remember Me. See if Joomla login module Remember Me is working.
