Steps are just tabs that have registration fields on them. If you only have 1 tab with registration fields then don't bother using Step by Step (disable in CB Conditional > Config). To add more steps simply create more tabs and add fields to those tabs that are set to display on registration.
Your date field is expanding due to your template, nothing to do with CB Conditional. Your template is styling inputs with a specific width. Use Chrome or Firebug for Firefox to right click and inspect the date field dropdowns to see what CSS is causing this. Can inspect for you if unsure how, but need a URL to your registration page to do so.
