You can have as many fields as you want. You just hit MYSQL column size limits. Changing your database engine to InnoDB using phpmyadmin > _comprofiler > Operations > Storage Engine should help with this. You can also try changing varchar columns to text to free up space for more fields. Please make a backup of your database before doing any of this though. Field values are just a database row per value so you have no limit with those.
