Using the CB Connect plugin, the default username generated by the Google+ option seems to include an underscore, so for example, if John Smith is signing in using a Google+ account, the username generated is John_Smith. Is there a setting I've missed somewhere, as I would very much like to use this to login/register Google + users with this plugin?

If their Google account has a Nickname setup then it'll use that. Otherwise it'll generate a Username from their Name. I'm not sure I understand what your issue is, but no you can't customize how the name is constructed; this is done internally. You can allow them to change their usernames though by enabling username change feature within CB > Configuration > User Profile.
