You can edit the Subscription details within CBSubs > Subscriptions > ID (click the ID for the row you want to edit). You can't alter payment details though without editing them directly within your database (not sure why you would want to? legally they'd be accurate to when payment was made..).

I'm trying to test CBSubs as an Invoicing system for customers. So I could have this case:
Customer pay with cash. Then I put them to bank the day X.
Now I go to CBSubs and generate a subscription for this payment the next day. This will generate the invoice, but I want that the date reported in the invoice is about day X and not about day Y.
That's why I asked that.
Not sure yet this can work fine as a Invoice system, but at the moment CBSubs is the most complete component (plugins) for Joomla that can handle correctly invoicing, pro-forma invoicing auto-remainders for paiments etc...
The only doubt that I'm trying to solve now (Off-topic, sorry) is: can I create in back-end a subscription or a merchandise for a customer and assign to him but not activate it untill he really pay?
Now, if I assign a subscription to a user in back-end it just activate the plan or the merchandise without asking user to pay. Is there a way to assign them and let user pay to activate?
Just go on frontend and make a purchase with the Offline payment gateway for the date they request it. Then when you go to Pay the offline basket you can select whatever payment date you like. CBSubs isn't designed to be an invoice system so I have my doubts this will work out too tell for you and likely be more complicated then it needs to be. I suggest looking into alternatives designed specifically for invoicing.

No, backend subscriptions bypass the payment process entirely. You'll need to go through normal frontend process for the user while logged in as a moderator.

Yes, you need to go through frontend (see their Subscription tab) while logged in as a moderator.
