All of them are used. You may have some CB plugin tables for a plugin that you uninstalled as CB doesn't delete database data to avoid accidental data loss, but in general all tables prefixed with _comprofiler are used. Plugin tables are usually structured as _comprofiler_plugin_PLUGINTABLE or _comprofiler_plug_PLUGINTABLE. The exception being CBSubs which is _cbsubs and GJ which is _groupjive. Additional tables are _comprofiler_provinces from CBSubs, _comprofiler_countries from CBSubs, _comprofiler_privacy from CB Privacy (old version), and _comprofiler_ratingfield_log from the rating field.
You could use CB Auto Actions with a Query action with a substitution supported query to push data to your 3rd party table or use a Code action with PHP method if your 3rd party usage has an API you can use. You could then use normal field substitutions to grab user data and push it through. You'd normally want to do this on the after profile update and after registration triggers.
