I'm trying to set the profiles up, so that only those on the board can see address and phone numbers in people profiles. I'm having a hard time figuring out how to do that so it works.

Globally determines if a field will display on profile or not.
Conditional plugin settings
Allows you to conditionally display a field at various locations based off other field values.
Privacy setting
Allows you to set field display based off user or moderator supplied privacy value.
What you're probably wanting is to use CB Privacy and set the display to moderator controlled then set the default value to whatever privacy setting you like. An alternative is to move the tab to a not shown on profile position then create a new tab accessible only to your view access level then display the fields on the new tab using substitutions in a delimiter field.

OK, I've managed to work out how to set up fields that only people in a certain group can see. The problem was I had to step back and go into the Moderators tab and designate the group as moderators.
The next question is an extension of this. The predefined email field is set to "Display link to email form", so if people want to hide behind the curtain, they can. However, I want people in the moderators group to be able to see the actual email address.
How do I make this happen? If I could create a separate field with the text email (no link) I could then configure it with CB Privacy. Is there any way to automatically create a copy of the users' input for their email address that would not be affected by the "Display link to email form" setting? I guess I can always make them put their email address in twice, but would prefer not to make them do that. Or maybe you have an entirely better way of doing this.
However, I want people in the moderators group to be able to see the actual email address.
Then you'll need to create a delimiter field that only moderators can see (either CB Privacy or tab access) with the below substitution.
