Can i create a multi- or singleselect/dropdown field, where i can have an entry like "Other" and let user enter a string?

This has to be searchable, or perhaps also added to the dropdown/multiselect field automatically.

This would be brilliant.

Yes, add an Other value to your select field. Then create a new text field to store the other value. Once done use CB Conditional to show your text field if the Other value is selected. As it's a normal text field it'll be searchable like any other text field. Please see the below CB Conditional tutorial to get started on conditionally displaying it (not for multi-select type fields be sure to use "Contains" operators).
