So if we wanted to use https on some site pages, do I take it that the best strategy at present would be to use it on all the site pages, or at least all of those that lead into/link to a CB Subs page/form - in order to avoid a "switch over"?

If you want to use HTTPS it's recommended to use it across the entire site instead of at a single location. Doing so is the correct way to use SSL. This will also prevent CBSubs from attempting to do the switchover it self.
