CB Fields Manager, should all these be enabled?
"Gallery, profile, profile blog, profile wall"?
And should these be enabled:
"required, profile,registration and searchable"?

Depends on your needs. It's up to you what is used or not. Those specifically are used by CB Profile Gallery and CB ProfileBook. Normally they are marked as not required, not searchable, and not shown on registration, but again it's up to you.
