I would like have a range of date/times available in a field. Each date/time can be selected in a user's profile, but only once, no two users can select the same date/time.

The pool of dates/times would deplete as more users select them.

Is this possible in CB?

The goal is co-ordinate a type of roster with units of time allocated to certain users.

Best I can suggest is using a date field in combination with CB Query Field and its query validation. You'd then check the value the user is trying to supply against all users in _comprofiler and their values to ensure it doesn't exist already. This works really well for text, integer, etc.. fields so it should work fine for date as well.
