Hi,
I am trying to manage the privacy of the field "formatted name"; in my profile I set "private", I click "Update", but when I come back in the profile edit page, the field is public.
The Formatted Name field has no profile edit display so I've no idea how you're setting a privacy control for it. That field is used too widely to determine a users identity and do not recommend privacy controlling it or you'll likely break a lot of plugins name displays (e.g. GJ, Activity, and multiple other usages). At any rate the only way to privacy control it is to use a force privacy control that's always applied, which is configured in backend while editing the field.

i used the option "Force Edit Display" (This will force a field to display in profile edit even if it does not have a profile edit display. Profile display of a field will be used. Note the field will not be editable, but will allow privacy controls on fields that normally would not due to not having an edit display.)
My client needs to manage privacy on the full name. Can I use an other identifier "always visible" ( ex. Username ) ?
That parameter is gone in latest release. Forcing the edit display doesn't function well for many fields. The Formatted Name field can't be privacy controlled. Doing so causes the issues outlined above. Typically Formatted Name and Avatar should not be privacy controlled as they're used so heavily outside of profile.
