Is that even a CB Login page? Or am I seeing the Joomla login page?

That's Joomlas login page. Your CB login page is below.

www.802eyecare.com/index.php?option=com_comprofiler&task=login

You'll notice the "Error: CB Login module not created (required)." error is showing as it should.

Being able to reach Joomlas login page means you don't have the CB system plugin installed and/or enabled and/or you've disabled the URL redirecting.

Yes, I disabled the module to see if it would throw an error, and it didn't. That's why I wondered which login page I was seeing.

CB system plugin is installed and enabled and URL redirecting is enabled.

So I guess the real issues are: why am I seeing a Joomla login page instead of a CB login page, and why is the Joomla login page redirecting me to the profile page instead of the page I tried to access in the first place?

Your Joomla login is redirecting to CB fine. Please see the below.

www.802eyecare.com/index.php?option=com_users&view=login
www.802eyecare.com/index.php?option=com_users&view=user.login
www.802eyecare.com/index.php?option=com_users&task=login
www.802eyecare.com/index.php?option=com_users&task=user.login

All of the above are Joomla login page endpoints. All of them send you to CB login.

I've no idea where the URL you originally supplied is coming from. What is your www.802eyecare.com/add URL supposed to be linking to? It does not look like a standard Joomla SEF URL. If you're using 3rd party SEF that could be a reason for the issues. Try disabling SEF entirely and see if issue persists.

/add is just a generic menu item that I created in Joomla:

It's not a 3rd party component or anything. It's just a menu item to the Create Article component of Joomla. Its sole purpose is to make it easy for authors to remember how to add articles from the front end. I've been doing this for years on other sites. See here for example:

www.friendlyphotozone.com/submission

That's the exact same thing on Joomla 2.5.27 and CB 1.9.1. Notice it redirects to the CB login page.

CB 1.9.1

That'd be the issue. This works perfectly fine in CB 2.0.4 (just rested on both j2.5 and j3.3). For CB 1.9.1 you need the CB Core Redirect plugin archived in the free downloads section. Sorry, I had assumed you were on CB 2.x.
