You want to use a field for the Sort By, but you don't want it to be searchable as search criteria? Just make the field is not searchable within CB > Field Management if that's the case. A field has to be set to display on profile to be searchable as it doesn't make sense to CB to search a field a user can't even see. If you want it searchable, but not shown on their actual profile you can move the field to a tab that's in a not shown on profile position.
