No fields are attached to params. Params renders CMS fields only (language, editor, etc.. and in backend usergroups). The edit display toggle stops the query from ever seeing the field in the database.
I'm not able to confirm your issue so I've no idea what could possibly be causing this. Is it toggling back on within CB > Field Management? or just strictly randomly displaying in frontend profile edit? If it's toggling backend on in CB > Field Management then something would need to be storing the fields row again with it enabled. If it's randomly displaying only then something would need to be adding it to the fields array again in which case try disabling CB plugins 1 by 1 until it stops doing that to see if a plugin is doing it.
