Did you install the footer plugin? If so, check the template you are using. It may have a copyright display option. Set that to yes and add your own or turn it off.
CB Footer only removes the copyright from core CB. The copyright in the templates are completely independent from this. You'll need to modify the index.php and replace the copyright with your own or remove it entirely.
