Is there any downside to using a "no-reply@domain.com" email address, where I won't be accessing that email box? Is this email used for anything else other than registrations being sent out?

This is a Joomla setting and you should really explore the Joomla support forums for a definitive answer.
I would say that any email sent from your Joomla site (and any extensions that take advanatege of this Joomla api) will be affected.
In some cases mail clients check if email sent from address is valid and if not they might mark emails as spam.
Only if the registration email address isn't supplied in CB > Configuration > Registration.
