The event owner doesn't show as a guest as they're the owner (see your name to the far right). You can unattend from the dropdown. Quick actions are made buttons for high priority options. It's bad UX to display the unattend as an independent button. Regardless all of GJ frontend is template based so you can make it a button if you want by modifying the template files.
