We have a subscription that we now want to be able to buy/renew only through a component on our website.

Is there a way to set up a gateway (or something else in the plan definition) so that you can't buy/renew
the subscriptions through CB, but just get some text with a link to renew?

For renewals, no. Only upgrades/registration can be configured to upgrade via URL only, but that's just a visibility condition and is configured under the Workflows tab of your plan.
