Not sure what I've done wrong.
In the 'privacy' plugin field 'privacy_delete me', I went to the
Profile Edit Value Layout
And entered:
<span class="fa fa-trash-o" style="color:red;font-size:large"></span>
It shows the icon as I would like, but it is not clickable?
What am I doing wrong?

First of, thankyou for the better CSS code for this
Secondly, I would like to not show the text "Delete account and user profile.", but rather have that replaced by the icon, and the link to work for the icon.

For that I recommend just using a language override and translating the string to your icon. You should be able to do a string search for "Delete account and user profile." to find its language key. See the below regarding how to do this.
Your override string would just be the HTML for your icon.
