You can have as many galleries as you want. Create a new tab then add a Gallery field to it. Set the asset to something like profile.[user_id].private (exactly as that.. user_id will substitute in correctly). You can not currently control privacy of individual gallery entries, but you can for the entire tab using CB Privacy and enabling privacy controls on its tab.
