I tried to display the Instagram ID but it is not showing up neither on profile edit nor on profile. It is published, no conditions, no paramters, in the contacts tab along other displyed fields ... what could I be missing? Is there something special to the social fields? I know, an embarrassing noob question.

It doesn't display in profile edit on frontend. You do not set social id fields through profile edit. They are set using the connect buttons in your CB Login module. If the field has a value or you are not hiding empty fields it should display on profile view if it's set to display on profile view. Ensure CB Connect it self is published and public within CB > Plugin Management though.
