I send out a mail that contains a multiformat field.
It is shown as 2012|*|2013|*|2014 etc.
Is it possible to substitute the |*| with , in the mail somehow?

You're likely substituting in the raw stored value. You need to use [cb:userfield field="FIELD_NAME" /] instead of [FIELD_NAME].
