I'm trying to build a way for users to record their mood (happiness level) and display it in their profile, and then display a chart of their entries for each day or over a month's time. Any suggestions on how I could do this in CBf?

You'll need to develop a plugin or Joomla extension for that. You're needing full form display, saving of form data, and charting of that form data. I suggest seeing if there's a Joomla extension available that can do something similar and see if it can be integrated into CB. A custom form extension like RS Forms, etc.. can handle the form display and save, but doubt it can handle the charting.
