Is it in someway possible to track how many times certain images have been downloaded from a CB gallery ?

Nope, but seams like a reasonable feature to implement at least tracking of views. Have added a feature ticket to review implementing view tracking.

Photos, Music, and Videos would track views on modal window and Files would track downloads.
