Edit the avatar field in CB > Field Management and under Parameters > Image Display set the following.
Pending Default: First and Last Initial with Unique Color
Empty Default: First and Last Initial with Unique Color
It will then generate an avatar based off their initials and generate a color for it based off their name using a text to color method. This will then display if they haven't uploaded an avatar. If you want to always use this and not allow uploads simply set the avatar field to not display on profile edit.
