How can I stop New User Details E-Mail to New Users from Community Builder? Because Joomla's standard email when a new user is created in the backend is enough for me

I suggest turning off Joomla's email and not CBs. Turning CB's registration email off would impact frontend.

Your users wouldn't get any of CBs registration emails.

2. How can I deactivate Joomla E-Mail for new User?

Within Extensions > Plugins edit "User - Joomla!" and set "Notification Mail to User" to "No".

How can I change / edit the Text for CB's registration email?

Within CB > Configuration > Registration you can configure both pending and welcome emails. Moderator emails can be configured using language overrides.
