I need to change the "Thank you for your payment of USD $amount for whichever event" in the confirmation message.

Believe that's the following language string.

Key: THANK_YOU_FOR_YOUR_PAYMENT_OF_S_FOR_THE_S_S_e7bd92
String: Thank you for your payment of %s for the %s %s.

You should be able to override it using CBs language overrides feature shown below.
