Is it possible to add more information (a cb field) in the mail that is send to the moderator upon a user deleting his/her account ?

Yes, simply override the language string using CB language overrides shown below and add more substitutions to it.

The language keys and strings for account delete are as follows.

Subject: USER_ACCOUNT_DELETED_fda2dd

Code:

User Account Deleted
