That's too complicated for me. We would be hiring someone at Joomlapolis to set up our CBSubs. They would know what to do for this, correct?

Depends on the complexity of the install you're wanting. A 1 page maximum detailed specification is required for install requests. Anything that requires custom coding won't happen, but setting up a simple email is reasonable.

Does that email I am talking about that needs to have the attachment links in it require custom coding?

No, but from the sounds of it you probably wouldn't need the install service after reading the CBSubs manual carefully you could probably set this up your self. For the most part you're just needing to send some extra emails with the normal CB registration and CBSubs subscription process. A lot of your process is standard emails between one another, which doesn't really involve CB or CBSubs beyond the initial email that can be sent by CB, CBSubs, or CB Auto Actions.

The manual is a little intimidating because it's so large and I have no idea what I should and shouldn't be using (this is apparent by the fact that I installed EVERYTHING to do with CBSubs even though I may only use a couple of features).

I will read through the manual again and start piecing items together and see if I need any help along the way.

Well everything is a bit intimidating at first to be honest, but once you start tinkering with things you'll get the hang of it. Just start with the basics by installing the main CBSubs plugin, CBSubs bot, and CBSubs Content. Then create a dummy test gateway so you can make onsite test payments. Now make a couple of different types of plans to get the hang of how the workflows behaves. That should be starting out pretty simple to get the hang of the basics and you can focus on those parts in the manual.
