Well, something you did broke your site.

Turn on Joomla debug and see if it reveals more relevant and helpful errors.

Nick,

OK - here is what the issue was. The php.ini file had been added and once this was removed from the root directory, things worked again. Apparently the php.ini file conflicted with the one of the server causing the issue.
