If I've made changes to the language files in the past it may be stored in the older language file - I should probably back up the files somewhere before I uninstall.

If on J2.5 or greater, no. If on J1.5 then possibly; I can't recall which it checks for first.

Yup, that'll do it. The "CB Paid Subscriptions English" plugin probably isn't loading at all then and would be safe to remove; I'd make a backup and download to your computer though encase you've string changes you want to move over to the CB Paid Subscriptions en-GB plugin.
